Here's a nifty idea for those pesky carrot tops from your Spring Carrots.
Chop your carrot tops into small pieces (don't forget to wash them first). Put them into a food processor with a splash of olive oil, some garlic, pine nuts and parmesan. Pulse until blended but not smooth and use wherever you would use basil pesto.
That's it!! So easy and it tastes great : ) Good stuff, you have reduced waste and made something yummy. Congrats food warrior!
